     Uncle Cliff's Easter Biscuit Recipe

• 1 level teasp. Cremola Rice( bit like Semolina) leave out if you don't have any,
• 6ozs Self Raising Flour,
• 3ozs Caster Sugar,
• 4ozs Margarine
• 1 to 2oz currants,
• half an egg,
• Grated rind of one Lemon (or Orange)
• Can add a pinch of mixed spice if you wish.

Cream margarine and Sugar together. Beat in egg. Add lemon rind,flour,currants and cremola (& mixed spice). Knead together well. Chill in fridge for a bit then Roll out thinley. Cut into 3.5inch rounds (or whatever shape your biscuit cutters are) on a well floured board. Cook on a lightly greased and floured tin at 180C for about 15mins until lightly browned.
